I've had a couple races since my last post and I've signed up for the Dirty Dash again.  I'm pretty excited.  It was really fun last year.  A bunch of my friends are doing it with me this year and I'm trying to get everyone to dress up for it.  

I had to get groceries yesterday and I got some pretty delicious things.

2 3/4 cup Oat Flour
1 cup Unsweetened Applesauce
1/2 cup Brown Sugar
1/2 cup Unsweetened Coconut Flakes
3/4 cup All Natural Maple Syrup
3 Egg Whites
1 tsp Baking Soda
1 tsp Vanilla
2 tsp Cinnamon
1/2 cup Raisins
1/2 cup Semi-Sweet Chocolate Chips

Preheat and Bake at 350 for 11-12 mins.

.6 mile swim, 14.2 mile bike, 3.1 run

The swim was first and I didn't wear a wetsuit.  I was worried it would be super cold.  It wasn't.  It was actually really nice.  We swam at Rainbow Lake just out of Rexburg, ID.  For me the swim was the hardest.  I was good that it was first.  Then came the biking.  It was probably the easiest part of the race but going up hill was beastly in some spots.  I think that was just because I was so tired from swimming.  Then the run, it wasn't so bad.  I didn't really like the part of the run where we went through sagebrush and dirt though because there were 4-wheeler tracks that made two big ruts in the trail and i kept feeling like I was going to break an ankle.  Also the last little chunk of the run that was in the dirt area went straight up hill but besides that it was a good run.

I haven't been that exhausted in a long time.  If you want to really push yourself do a triathlon!  It was awesome.  I loved loved loved it.   I want to pick it up as a hobby.  

In conclusion if you have been thinking about doing a triathlon...DO IT!!! Yo

I discovered I'm allergic to kiwis by making a kiwi soft serve that was suppose to be made out of bananas....Opps.  I'm totally going to try it again with bananas and another batch with nectarines but I need them to ripen first.  Stay tuned for the results!

I'm super craving sushi right now.  Omg. Sushi! NOM NOM NOM!!

I didn't eat sushi for dinner but I did make clean protein lemon bars and iced choffy protein drink.  They were both delicious.  The lemon bars were a little protein-y (when you use a lot of protein powder in a recipe it will make it a little dry) but I made a delicious frosting out of nonfat plain greek yogurt, a little bit of honey, and a couple drops of lemon juice.  Once that was on top it was mega good.  The iced choffy protein drink was to die for.  LOVE that drink.  I think I will be having it every morning for the rest of the summer.

Besides discovering the brilliant ideas of making strained nonfat greek yogurt into a cream cheese substitute and defatted flour all by myself, I've found you can make a delicious low calorie flour out of dry garbanzo beans.  1 cup dry garbanzo beans = 1 1/2 cup garbanzo bean flour at a little less than 300 calories per cup that makes it one of the lowest flour calories ever.  (See Socca recipe to make delicious protein/fiber rich flatbread) I would advice mixing half of what you need with half oat flour.  Oat flour is the next lowest in calories that I've been able to find.  (Just blend oats in the blender to make it)  Garbanzo bean flour by itself is a little gritty and dense, using half oat flour to mix into whatever you are making will help it turn out more like it should and it will still be low calorie and delicious.  Oat flour is about 370 calories per cup so the mixture averages out to about 335 per cup.  That vs. the normal calorie amount of white bleached flour (455 calories per cup).....ya "normal" flour is awful calorie wise and nutrient wise too.  It has almost NO nutritional value.  Garbanzo bean flour has tons of protein and tons of fiber and oat flour is also pretty good in both of those things too.

P.S. no worries I will be adding the calories, fat, protein, carbs, and fiber values for all of these recipes soon!

I worked out at 6am and it felt great.  The only part that didn't feel great was actually getting out of the bed but once I was up it was all good. I'm a night owl and prefer to workout after work but my personal trainer Anna (also one of my good friends from high school) said it would be good for me to workout in the morning with her and the other trainers.  

Conclusion: Oy! Caffeine + Me = 6AM Gym Possibilities

I've been nomming on my potato gatto all week and it's delicious.  I'm probably going to try making my own noodles soon.  I am hoping to make them out of spinach, egg whites, and garbanzo bean flour.  I'm pretty excited.

I also defatted some nuts.  Yes you heard right.  I wanted to make defatted sunflower seed flour because it is really low in calories.  After much research I discovered I would either have to buy an oil press/expeller(they're expensive) and take the squashed remains and put them in the blender or I would need to chop them, boil them, dump it all into a fine sieve (to get rid of the oil and water), dry them, and then put them in the blender.  I know it's a long long process to make some low-cal flour.
I'm poor so I decided to take the long route of boiling them.  IT WORKED! Sweet success!  I actually did it on pumpkin seeds because that's what I had on hand and I figured I could sacrifice a tablespoon for my experiment.  I have yet to try it with the sunflower seed nuts but that's ok, I'm pretty confident it will work the same.

I also discovered you can strain nonfat greek yogurt (any yogurt will work) to make a cream cheese substitute.  I did it and I was having doubts but guess what?! It totally worked! and I made a Japanese style cheesecake with it. NOM NOM NOM!

To celebrate my bday I took myself skydiving.  Then I went to an awesome hippie restaurant in SLC called Oasis Cafe and ate DELICIOUS things:  Tapenade, Hummus, Caponata, Spanish Cheese, Vegan Chocolate Cake!! OMG! Now it is the day before my birthday and I want to celebrate my last day of being 23 rather than celebrate me being older tomorrow :( UGH! So I am going to make a (hopefully) delicious Strawberry Almond Cake for myself to blow candles out on, buy Sherlock Holmes 2 as a birthday gift to myself, and have my friends sing "A very happy unbirthday to you" to me.  It's going to be epic.

Anyone who is thinking about skydiving---IT IS AWESOME! I almost threw up on myself at the very end when we were about to hit the ground but besides that it was awesome and I would do it again.  I recommend it to everyone.  Even old people-I'm not joking there was an 80 something year old grandma that went up on the plane before me and jumped out, she survived....I'm pretty sure someone said she threw up in the plane but hey whatevs, she's still pretty dang cool if you ask me.

Holy hell I've turned into the exact opposite of who I thought I was....I HATE cooking and baking and yet somehow I have developed a slight obsession with it.  OMG.  How did this happen?

I came home from work today and I seriously just wanted to go to sleep and not deal with the world for a while.  I was exhausted and mentally tired of trying to wrap my head around all the crazy stuff that has been happening lately.  Instead of sleeping or something like that I went to the store and bought some zucchini, tomatoes, tahini, onions, chickpeas, artichoke hearts, and almond milk.  

Four and a half hours later I had created a variety of things and by a variety I mean seven different recipes.  Whoa.  I am so insane.

I learned a lot of things from this little misadventure: my blender sucks at pureeing chickpeas, applesauce as a sweetener tastes awful in pumpkin egg omlettes, artichoke hearts are not by the pickles in Albertsons they are by the canned vegetables, and chickpea patties overflowing with parsley tastes just fine.

Here is a list of the things I made:
   
   Spinach Artichoke Hummus
   Barked Parmesan Tomatoes
   Chickpea Patties
   Zucchini Fries and Tomato Slices
   Zucchini Hot Cakes
   Veggie Muffin Omelettes
   Pumpkin Muffin Omelettes

The spinach artichoke hummus is delicious-a little thin due to me having to put water in there to get it to blend-but still good.  The baked parmesan tomatoes were better in theory....baked tomatoes are not nearly as good at uncooked tomatoes...that's just me though.  The chickpea patties ended up a disaster because the damn blender wouldn't blend them.  I was also getting lazy at that point so I didn't chop up my parsley before throwing it in and there was A LOT of it.  The goo mixture tasted just fine...it didn't look so great and it wasn't smooth because my blender sucks but still it was tasty.  The zucchini fires and tomatoes were semi-good/semi-weird and I don't know how I feel about them.  The zucchini hot cakes were pretty tasty but I messed up and put an egg yolk in and overall too much egg but besides that they were still pretty good.  The veggie muffin omlettes were actually pretty good I wish I'd had a better variety of vegetables but still I thought they were rather tasty for what they were.  The pumpkin muffin omlettes were interesting.  I put stevia in two, applesauce in one, and brown sugar in another.  The result....the stevia ones were the best.  The applesauce one was disgusting but that is probably due to the fact that the applesauce was unsweetened and I forgot this at the time.  The brown sugar one was way too sweet....barf.  Anyways! In conclusion the hummus, zucchini hot cakes, and chickpea patties (minus the complications) were pretty good.  The veggie muffin omelettes were decent and the pumpkin ones have potential but I will need to tinker with them some more and the zucchini fries and parmesan tomatoes are tolerable but not that great.
